
Working with the local Montana farm, Amaltheia Organic Dairy,
the goal of this project was to create a value added product that utilizes excess waste crop generated by the farm. This task resulted in Kopia - an indulgent beet and chèvre ice cream that utilizes over 50% beets in each flavor.

ORIGINS
Kopia stems from the story of Amaltheia in Ancient Greece. Amaltheia was a goat-nurse that nurtured zeus to health with her milk in the caves of the island Crete. Her horn later came to be the horn of plenty, or cornu-kopia.
Kopia was brought to life with the goats and the roots of Amaltheia Dairy in Bozeman, MT.
